EASY BEETROOT SALAD

(serves 4-6 as a side salad – perfect for a
late-summer braai)

Ingredients

Salad

  • 80-100 grams rocket 

  • 4-6 medium-sized cooked beetroots, cut into quarters 

  • 1 large orange, segmented and with each  segment’s flesh removed 

  • 1-2 stems of sliced spring onion 

  • 30 grams fresh coriander leaves, removed from stems 

  • 1-2 danish feta discs, cubed 


Dressing

(no specific measurements are necessary – make a whole bottle to keep in the fridge!) 

  • 50ml olive oil

  • 50 ml balsamic vinegar 

  • 1-2 teaspoons of wholegrain mustard 

  • 1-2 teaspoons of raw honey

Method

Salad

  1. Line a flat salad server with fresh rocket leaves 

  2. Place beetroot quarters on top of rocket

  3. Add orange segments, spring onion and fresh  coriander leaves 

  4. Place cubed Danish feta on top just before serving  (to keep beetroot from ‘bleeding’ onto the white  cheese) 


Dressing

  1. Mix all the ingredients to form an emulsion 

  2. Add salt and pepper to taste
